Quinoa Fruit Salad with Honey Lime Dressing

Summertime means lots of fruit, but sometimes eating plain fruit can get boring. Try this quinoa fruit salad to change it up and add a little protein to your meal! Serve this as a side or as breakfast. You can eat it as is, or add a little yogurt—either way it tastes great!

  • 1 cup (170 g) uncooked quinoa, rinsed
  • 1 can (14 oz.) full-fat coconut milk
  • 1/4 cup (60 ml) water
  • 1/4 tsp. (1.5 g) salt
  • 2 Tbsp. (30 ml) lime juice
  • 2 drops lime essential oil


  • 4–5 cups fruit mix of choice (strawberries, blueberries, raspberries, mango, blackberries, peaches, etc.)


  • 2–3 Tbsp. (30–45 ml) honey or maple syrup
  • 2 Tbsp. (30 ml) lime juice
  • 1/4 tsp. (1 g) kosher salt
  • 1 drop lime essential oil
  • 1 drop spearmint, peppermint, or basil essential oil


  1. Place quinoa ingredients in a small pot, and bring to a boil over medium heat. Boil for 5 minutes. Reduce heat to low, and simmer for 10 minutes. Fluff with a fork, and continue cooking for 5 more minutes or until the quinoa has absorbed all the water. Alternatively, you can cook quinoa in a rice cooker (add all ingredients and cook as you would rice) or in a pressure cooker (add all ingredients and cook on high pressure for 7 minutes). Allow quinoa to sit after cooking for a few minutes before fluffing and adding to the fruit.
  2. In a large bowl, combine 4–5 cups of chosen fruit. Add quinoa when it is done cooking.
  3. In a small glass bowl, mix together the dressing ingredients, and whisk until well combined. Add dressing to the fruit and quinoa, and stir until all the fruit and quinoa is coated and mixed together.
  4. Serve warm or cold, plain or with yogurt. Enjoy your healthy and tasty dish!
