Coconut-Citrus Bath Melts

Sometimes you just need a nice hot bath to make things better. These bath melts will enhance your bath by soothing your skin and energizing your body. You’re going to love how you feel!

Coconut-Citrus Bath Melts

  • Servings: 10-12

Ingredients:

  • 1 cup Coconut Oil
  • 5 drops lime essential oil
  • 5 drops lemon essential oil
  • 5 drops orange essential oil
  • 5 drops grapefruit essential oil
  • 1 Tbsp. zest from any citrus fruit (optional)
  • Small silicone molds or ice cube tray

Instructions:

  1. Using a double boiler, melt the coconut oil over medium heat until liquified.
  2. Allow the coconut oil to cool momentarily before adding the essential oils.
  3. Stir the essential oils and the zest into the coconut oil.*
  4. Pour the mixture evenly into the molds or ice cube tray.
  5. Refrigerate the bath melts for 1–2 hours or until hardened completely.
  6. Put a bath melt into your warm bath and allow it to dissolve while you soak.
  7. Because coconut oil may liquify in a warm room, keep the remaining bath melts in the refrigerator until ready for use.

*You can substitute an floral-herbaceous blend for the citrus oils, if desired, and replace the zest with crushed, dried herbs. Try an essential oil blend of 5 drops geranium, 5 drops lavender, 5 drops lemongrass, and 5 drops rosemary essential oils.

Grilled Cinnamon Peaches

With peach season upon us, here’s a way to top off a late-summer cookout with a simple, delectable dessert. Warm, sweet, cinnamon peaches make the perfect complement to savory barbecued dinners. You can also panfry peaches indoors. Since they’re so quick and easy, you’ll make this your go-to dessert for many occasions!

Grilled Cinnamon Peaches

  • Servings: 4

Ingredients:

  • 2 peaches
  • 3 Tbsp. brown sugar
  • 2 tsp. butter, melted
  • 1 drop cinnamon essential oil
  • vanilla ice cream or yogurt for topping

Instructions:

  1. In a small bowl, combine the melted butter and cinnamon essential oil, and set aside.
  2. Slice the peaches in half—leaving the skin on—and remove the pits.
  3. Brush the melted butter with cinnamon essential oil all over the peach halves. Grill them with flesh side down over medium heat for 2–3 minutes or until browned. You may want to use the cooler edges of the grill if you’ve been barbecuing meat. (Alternately, panfry the peach halves over medium-high heat in the same way.)
  4. Turn the peach halves face up, and sprinkle the brown sugar over the flesh. Grill for another 2–3 minutes or until the skin is browned and loosened. (If panfrying, cover the pan and cook for another 2–3 minutes or until the sugar caramelizes.)
  5. Remove peach halves from the heat, and serve with or without the skin—topped with ice cream or yogurt.

 

No-Bake Chocolate Fruit Pizza

Finding healthy snacks that everyone will enjoy can be challenging. Here’s a healthy alternative to your traditional cookie-crust fruit pizzas! This fruit pizza is tasty and healthy, and you can top it with your favorite fruit to make your own special masterpiece. Better yet, have the kids decorate it for a fun activity to cure boredom!

No-Bake Chocolate Fruit Pizza

Ingredients:

Crust

  • 1 cup (140 g) whole almonds
  • 15 medium pitted dates
  • 2 Tbsp. (24 g) coconut oil, melted
  • 1 Tbsp. (8 g) cocoa powder
  • 1 tsp. (5 ml) vanilla

Filling

  • 1/2 cup (120 g) cream cheese
  • 1/2 cup (140 g) plain greek yogurt
  • 1 Tbsp. (15 ml) sugar or honey
  • 1/4 tsp. (1.5 ml) vanilla
  • 2–3 drops orange, lemon, or lime essential oil

Toppings

  • 1/4 cup (40 g) strawberries
  • 1 clementine or mandarin orange
  • 1/4 cup (40 g) blueberries
  • 1/4 cup (40 g) blackberries

Instructions:

  1. Begin by making the crust by blending the almonds in a food processor until they reach a rough flour-like consistency.
  2. Add in the dates, melted coconut oil, cocoa powder, and vanilla, and blend again in the processor until well combined.
  3. Press the mixture into a circular tin or tart dish, and refrigerate for an hour.
  4. In a separate bowl, whip the cream cheese and greek yogurt until well combined.
  5. Add the honey or sugar, vanilla, and essential oil, and combine thoroughly.
  6. Once the crust has set, move to a plate, and spread on the filling.
  7. Decorate the pizza with the fruit, making your own design!

You can use any fruit you would like, not just the ones listed. Other fruits you can add include grapes, kiwi, apples, raspberries, etc. Find the fruits you like and be creative!

Frozen Yogurt Snacks

It’s hard to stay healthy with all the snacking we tend to do. Solution? Healthy snacks! These yummy frozen yogurt snacks are really good for you, and they taste amazing too. Now you can enjoy a sweet treat while keeping up with your health goals!

Frozen Yogurt Bites

  • Servings: 12

Ingredients & Supplies:

  • 2 cups (570 g) plain greek yogurt
  • 2 1/2 Tbsp. (40 ml) honey
  • 1 tsp. (5 ml) vanilla
  • 2–3 drops essential oil
  • 1 1/4 cups (190 g) fruit
  • Cupcake liners

Instructions:

  1. Combine yogurt, honey, and vanilla in a bowl.
  2. Add essential oil until you reach your desired flavor.
  3. Cut the fruit if necessary, and stir into the yogurt.
  4. Place the cupcake liners into a cupcake pan, and drop the yogurt into the liners.
  5. Place in the freezer for 2 hours, or until completely frozen.
  6. Once the yogurt treats are frozen, pull out of the freezer and let them thaw for a couple minutes so that they come out of the cupcake pan easily.
  7. Store the yogurt bites in the freezer, and enjoy whenever you get that desire to snack!

You can create your own flavors; some of the flavors that we liked were raspberry-lime, blueberry-lemon, and strawberry-lemon.

Sunshine Salsa with Cinnamon Tortilla Chips

Sunshine Salsa

  • Servings: Yield=approx. 24 cups

Ingredients:

  • 4 nectarines
  • 1 pineapple
  • 4 peaches
  •  6–12 fresh cilantro leaves
  • 1–2 drops cilantro essential oil
  • 3–5 drops lime essential oil
  • Onion (fresh or powder) to taste
  • Sea salt (optional) to taste

Instructions:

  1. Chop all fruit, fresh cilantro, and onion (if using fresh), and combine in a large bowl. (The size of your fruit pieces determines how chunky your salsa is.)
  2. Stir in 3–5 drops lime essential oil and 1–2 drops cilantro essential oil. Start with 1 drop of each oil, stir, and add to taste. Add salt to taste, if desired.
  3. Allow to sit for at least 4 hours before serving.
  4. Make Cinnamon Tortilla Chips to eat with the Sunshine Salsa!

Cinnamon Tortilla Chips

  • Difficulty: Easy

Ingredients:

  • 1 pack flour tortillas
  • Cinnamon-sugar mixture using 2–5 drops cinnamon essential oil

Instructions:

  1. Preheat oven to 400° F. (205° C.)
  2. Cut tortillas into triangles.
  3. Spray or brush baking sheet with oil. Spread tortilla triangles onto the baking sheet.
  4. Sprinkle tortilla triangles with the cinnamon-sugar mixture. (This Empty Spice Jar works great for this step.)
  5. Bake for 7–12 minutes. Serve with Sunshine Salsa.
