Raspberry Lemon Popsicles

Cool off this summer with these delicious and refreshing popsicles! These treats are vegan and loaded with good fruit, healthy fats, and non-dairy milk, with the added benefit of lemon essential oil.

Raspberry Lemon Popsicles

  • Servings: 4–6

Ingredients:

  • 1 cup (130 g) raspberries
  • 1 banana
  • 2 Tbsp. (24 g) coconut oil (optional)
  • 2/3 cup (160 ml) coconut milk or almond milk
  • 1 drop lemon essential oil

Instructions:

  1. Add all ingredients to a blender, and blend like you would a smoothie.
  2. Pour into popsicle molds, and freeze for at least 3 hours or until solid.

Coco-Cacao Mint Fudgsicles

Go ahead and repeat the title of this recipe—it is seriously so fun to say! Coco-Cacao Mint Fudgsicles (it’s pronounced “ko-ko kuh-kow”). Coco-Cacao Mint Fudgsicles. Coco-Cacao Mint Fudgsicles. Now keep chanting the name as you throw the ingredients in the blender. It’s almost as fun to say as it is to eat these yummy, healthy treats!

  • 1 can (13 oz.) coconut milk
  • 1/3 cup (27 g) raw cacao powder (or cocoa powder)
  • 2 Tbsp. (24 g) coconut oil (optional)
  • 2 Tbsp. (30 ml) maple syrup or honey
  • Pinch salt
  • 1 drop peppermint essential oil

Instructions:

  1. Add all ingredients to a blender, and blend like you would a smoothie.
  2. Pour into popsicle molds, and freeze for at least 3 hours or until solid.

Lemon Coconut Crisps

These little cookies are super cute and delicious! They are sure to be a hit with anyone who tries them! The recipe is also really easy and fun to make with kids.

Lemon Coconut Crisps

  • Servings: 2–3 dozen
  • Difficulty: Easy

Ingredients:

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup (100 g) sugar
  • 1/2 tsp. (2.5 ml) vanilla
  • 5–8 drops lemon essential oil
  • 1 cup (120 g) flour
  • 2/3 cup (57 g) shredded coconut

Instructions:

  1. Preheat the oven to 325° F. (165° C.).
  2. Cream together the butter, sugar, vanilla, and lemon essential oil.
  3. Gradually add the flour.
  4. Mix in the shredded coconut.
  5. Roll out little balls about the size of a walnut, and place on an ungreased cookie sheet.
  6. Flatten balls with the bottom of a glass dipped in flour (a fork also works, but will leave a mark).
  7. Bake for 20 minutes or until golden brown.
